These potato pancakes are eaten quite frequently in our household and I first tried them many years ago when Bohdan made them for me. The classic recipe comes from his Ukrainian heritage but he added his own flare to it! I hope you all love them as much as we do!

1 large, russet potato (this only makes 2 cakes)
1 egg white
2 tbsp diced onion
1 green onion, chopped (optional)
¼ tsp paprika
½ tsp black pepper
1 tsp salt
½ tsp garlic powder (or squeeze a garlic clove instead)
1 tbsp vegetable oil (more for pan drizzle)
Sour cream and dill to pair with
Cook each side of the potato cakes for about 8 min or until cooked all the way through
