Pot Roast Recipe – Delicious Beef Pot Roast on the Stove!

Beef pot roast is a perfect winter time recipe in our home. Although, to be fair, I made it this past summer as well when it was over 100, ha! We love to eat ours with cornbread muffins. Yum!! 😋

Choice of beef (I used a 2.5 lb chuck roast)

1 large onion roughly chopped

4 carrots peeled and cut into chunks

2 cups or so of mushroom quartered

3-4 large red potatoes quartered

3-4 small garlic cloves minced

Salt and pepper (quite a bit to season the meat and more for taste)

Flour for the meat

2 tbsp of olive or vegetable oil

½ cup dry red wine

2 cups chicken broth

2 sprigs rosemary

Parsley for garnish

Cook in your dutch oven on low heat for 1 hr per 1 lb of beef
